Newly opened China Republic in World Square played host to our Secret Foodies event last Saturday evening. Under the watchful glare of the warriors, guests were brought to ease with a glass of sparkling as they took their seats. It takes a few minutes for your eyes to adjust to the dim lighting, but the first thing you see is a wall of perfectly lined clay teapots light up for all to see.
With over 18 dishes on the menu, our guests were about to go on a journey through China. To start we were treated to an array of cold dishes. Next up were the hot dishes. The pecking duck pancakes are a signature dish and came with a ‘how to pamphlet’ outlining the perfect way to construct your pancakes. I, like most of our guests, ignored this and dived straight into a ‘stuff’-roll-and-eat’ method. It takes eight days to prepare the ducks in a purpose built duck oven that can roast up to 20 ducks an hour!
China Republic even have a dedicated Peking Duck Chef who performed a demonstration on how to carve the poultry on the night. After so many dishes, this was yet another ‘great… now I have to roll home’ moment. Some guests were taken on tours around China Republic to see the kitchen and private rooms while others stayed seated…to digest. The watchful eyes of the warriors never went astray, as guests slowly left China Republic. Another fun foodie adventure. Where to next?
