Last Thursday Secret Foodies hosted its first ‘official’ event in Melbourne with a unique Champagne Degustation. We teamed up with Piper-Heidsieck Champagne to deliver an evening of bubbles and discovery. Foodies learnt about the origins of champagne over a five-course degustation at, as it was revealed on the night, Comme Restaurant.
Stepping inside the grand ballroom the curtain of fairy lights made it feel as though you’d slipped into a glass of champagne. Inside, were round tables dressed in crisp, white table cloths and decorated with purple and cream kale flowers, tea light candles and bottles of champagne.
Each of the five courses was carefully matched with Piper-Heidsieck Champagne as our guests had the chance to drink, eat, sit back and relax, listening to tales of this French national treasure dating back to 1785.
First on the tasting menu was salmon gravlax with chervil, fresh apple and cider jelly.
Next on the plates were pork rillettees with prune jam, pickles and fennel sourdough.
Fish was next on the menu, a Cone Bay barramundi with ham consommé, parsnip, skordalia and crisp confit garlic.
Then came the beef – with a Rump Cap of beef from John Dee, QLD, with parsley cream and sauce bordelaise.
After that, it was the much-anticipated dessert of orange parfait, macadamia dacquoise, honeycomb and gianduja ice-cream. This was followed by coffee and petit fours.
The bubbles continued to flow and our foodies continued to mingle, all in all it was a bubbly evening.
