Guests challenged their perceptions of flavour, providence and process at this unique dining experience.

Secret Foodies diners recently explored an entirely plant-based menu prepared with labour and love at Alibi. In recent years, Sydney has grown an impressive portfolio of plant-based restaurants, with Albi in Woolloomooloo making for a worthy addition.

After receiving an SMS revealing the event’s precise location, guests eagerly flocked to the restaurant, tucked away inside the Ovolo hotel. Boasting innovative design and striking aesthetic, the restaurant sells itself as the perfect hideout from the bustling city, complete with intimate booths, partitions, a neon tree and a neutral colour palette.

In celebration of Negroni Week, guests were welcomed with a visually striking Negroni Spritz. The addition of liquid nitrogen gave the classic Italian aperitif a smoky and theatrical finish.

The food menu served up technical and seasonal dishes like kimchi dumplings with a ginger foam and charcoal steamed buns with roast carrot, cashew hoisin and red cabbage.
Complementing these plates was alight and aromatic Quest Farm ‘Silver Lining’ Pinot Gris, followed by a refreshing Stone & Wood Pacific Ale.

This followed on by other technically precise dishes like a rich sweet potato and taro gratin with spiced coconut cream and cashew parmesan and salt-baked celeriac with agave glaze, truffle and chestnut cream and apple. Accentuating these flavours was a well-matched organic Mesta Tempranillo.

Challenging everything that you know about nanna’s boiled brussel sprouts, the sprouts at Alibi were crispy and decadent, served with a maple carrot puree and mixed seeds. Accompanying this dish was Portobello mushroom with parsnip puree, dark chocolate, raisins and pinenuts.

Dessert reaffirmed Alibi’s visually striking and delicious menu with a chocolate raspberry tart, matched with an Italian Piero Gatti Brachetto Piedmont (2017).

Our Conscious Dinner at Alibi made for the perfect setting to impress, challenge and welcome the senses to the world of plant-based fine-dining.
